I recall, when just a child, fiambreras came and went out of my grandmother's kitchen. Check in your hometown for a private caterer, who may agree to help you reduce those take out dollars. However, if you are ever in San Antonio, feel free to drop by and visit and sample what cooking. Buen Provecho!
